Easy Homemade Yeast Bread Recipe

Baking your own artisan quality bread is satisfactory. It may sounds difficult, but in this article we are sharing an easy recipe that even beginners without any break making experience can replicate it. The resultant breads will be having artisanal characteristics - thick chewy crusts, chewy texture and sourdough alike holes that definitely will make you scream in joy!

Another worthy highlight is that no kneading is required - reducing some hand muscles sores you may have later! 

Easy Homemade Yeast Bread Recipe

Here is what you need - bread flour, salt, yeast and water. Simple!

  • 3 cups (450g) of bread flour (best if made with bread flour, which has higher protein content compared to normal flour to yield a chewy texture. If you have difficulty finding bread flour, normal flour could be used too)
  • 2 teaspoon of instant yeast / rapid rise yeast 
  • 2 teaspoon of salt
  • 1.5 cups (375ml) of lukewarm tap water (as long as your hand could tolerate the temperature of the water then it should be fine)

Here is the steps how to make it:

  1. Mix dough - Mix together the flour, yeast and salt in large bowl. Add water, then use the handle of a wooden spatula to mix until all flour is incorporated. Flour will be wet, sloppy and not kneadable. However, it is not runny like cake batter. Adjust with more water / flour if needed to achieve the right consistency.
  2. Rise - Cover the bowl of mixture with cling wrap / plate, and leave it at room temperature for 2-3 hours until the dough rises to double its volume, or even more. It is wobbly and feels like jelly, while the top is bubbly. 
  3. Refrigeration - Put it in a fridge for flavour development. Minimum 8 hours, but you can leave it there for maximum 3 days.
  4. Chilling - Take out the refrigerated dough and leave it for 45 minutes. You can preheat your oven & Dutch oven / Air-fryer at the meantime. 
  5. Preheat Oven & Dutch Oven / Air-fryer - The bread is best made if you have an oven & Dutch oven (cast iron heavy pot with tight-fitting lid). If you do not have an oven and Dutch oven like us, an air-fryer will do! Preheat the air-fryer with 230°C for 10 minutes prior baking. 
  6. Shape Flour - Put some flour on your working surface, and shape the dough to your desirable shape.
  7. Add raisin (optional) - You can add raisins when shaping your dough and it will be delicious raisin bread! 
  8. Transfer dough - Transfer the dough on a parchment paper and move it to the Dutch oven / air fryer.
  9. Baking - If you are using oven and Dutch oven, bake for 30 minutes with the pot covered, followed by 12 minutes with uncovered pot. If you are using air-fryer like us, put a small bowl of boiling water in the air-fryer before placing the metal rack. Then put the dough on parchment paper on the metal rack. Bake for 30 minutes using 230°C, then flip the dough upside-down and bake for another 10 minutes using 230°C. The colour will turn golden brown
  10. Cooling - Cool on the rack for 10 minutes before slicing.
