The 5-course dinner begins with an amuse-bouche, featuring smoked salmon crostini with pomelo caviar, along with mini chicken mushroom ragout bun and fish & chip with onion tartare.

Next coming up in the menu is a starter, featuring Chicken Mousse Ravioli. It has a sleek creamy taste along with a tad of pleasant aroma, thanks to the usage cheesy pumpkin veloute and a dollop of extra virgin oil. Crispy skin crumbles further enhanced the aroma profile.

As the weather of Penang hill gets chilling when the dusk set in, you will be glad to enjoy the warm Seafood Bouillabaisse with a seafood terrine and caviar lump.

Three different entree are offered during the dinner, and you get to pick whichever protein that best suit your taste buds. Personally, Honey Garlic Baked Red Snapper is my favourite, as the delicate fish has a balanced sweet and acidic taste. On top of that, there is a honey glazed Hokkaido scallop served along the the fish as well.

Another entree worth consideration is Sous Vide Chicken Roulade. We enjoyed the tender meat stuffed with spinach & assorted cheese that has compressed pineapple to supply a slight acidity that breaks the monotonous taste of the chicken.

Alternative, you may have Slow Roasted Prime Sirloin Beef, which is served along with fresh caught red prawns and Yorkshire pudding.

The dinner finish perfectly with a sweet end - Chocolate Royale that has coconut dacquoise, caramelized macadamia and strawberry ice cream. Paired it with a cup of coffee or tea to enjoy the wonderful evening at the top of Penang Hill.
