Feringgi Grill, a fine dining restaurant on the mezzanine floor of Shangri-La's Rasa Sayang Resort & Spa, Penang is renowned for serving exquisite modern grill cuisine and vintage wind in a warm, cozy ambiance with aerial view of lush tropical greenery. It is one of the most esteemed restaurant and for some, a sacred ground for haute gastronomy.
On 12th December 2017, Feringgi Grill hosted Napa Valley Wine Dinner. 5 different types of fine wines from Napa Valley, California were introduced to be paired with different courses prepared by Feringgi Frill Chef de Cuisine Thibaut Pouplard. Sam Stephens, the Winemaking Ambassador presented the wines' profile to the wines connoisseurs, alongside with Jill Moo, his local importer, Miss Catherine Thong from Luen Heng F&B Sdn. Bhd and Miss Catherine Loh from Treasury Wine Estates.
Half an hour of social time precedes the dinner, where guests are offered a photo opportunity at the booth with an exclusive photo printout on the spot and served with Beringer Founders' Estate Sauvignon Blanc 2014, a refreshing and soft mouthfeel white wine that gives a medium-length fruity finish.
The dinner then started with an Amuse-Bouche, a single bite Hors d'oeuvre that features smoked salmon on toast with cucumber dressing with a slight acidity.
Followed up was Thinly Sliced Hokkaido Scallops topped with green chili, season truffles, Pistachio, lime and herbs, paired with Sterling Vineyards Vitners Collection Chardonnay 2015. The classic California white wine complemented the scallops by giving a clean finish and refreshing lift to the palate. Hotness from the green chili was decently softened by the Chardonnay.
Next on the serving is Morel Risotto featuring Carnaroli Rice, which offered a savoury taste from the Mosel and a tad saltiness from the Gravy Sauce and Parmesan. Beaulieu Vineyards California Merlot 2015 was introduced to the dish as a soft start of the red for tonight, which drives the risotto through with a plumy aroma and a pleasingly acidulous finish.
Mango Sorbet with pepper, grapefruit and gin was served before the dinner continues to the main course.
Stepping up from Merlot, Stags' Leap Napa Valley Petite Sirah 2013 was served to give a more spicy and a structured body with rounded tannins to complement the soft piece of meat - Slow Cooked Short Rib Bordelaise with croutons and mashed potatoes.
A 100% Beringer Napa Valley Cabernet Sauvignon 2013 was served as the last red with aromas of black fruits and super ripe fruits to give a structured and richness to complement the Artisanal Cheese Plate with Jam and Sourdough. The Cabernet Sauvignon gave a nice depth culminated with a long finish.
The dessert - Passionfruit and White Chocolate Cheesecake was then paired with Beringer Classic Moscato 2015, a semi-sweet white that offers pleasant peach-scented with crisp acidity for a clean finish for the night.
Tonight's indulgence was then adjourned with Petit Fours - small bites of chocolate and a choice of coffee or tea. It was a wonderful night with epicurean delicacies and excellent wine pairing.
