Just some heads up, Ibérico pork refers to black Iberian pigs bred in sparse, large acreages of ancient oak forests in the Iberian Belt of Spain. Often times, it is called black pigs, which theory stipulated it as a results of interbred with wild boars. Currently, the black-hoofted, purebred Iberian pigs (also known as Pata Negra) feeds naturally on superior Holm Oak Tree Acorns. Due to its daily exercise derived from the search of acorns, calories are burn away more than confiend pigs, allowing fats to infiltrate the pig's muscular tissue, giving it its rich marbling and distinct silk, nutty, monosaturated fats that is high in oleic acid.

This would be one of the inspiring dish for the day whereby Ibérico pork's potential are fully unleashed. It is served raw and lightly torched, allowing us to savour its fine marbling and texture which literally melts within seconds in the mouth. Japanese Ponzu sauce is utilized to touch up the raw Ibérico, giving a tad of tangy sensation.
The appearance looks exactly like slices of raw filet mignon. And yes, this is the very few places which you can enjoy the delicate raw pork dishes.

Ibérico Magro (RM 38) |
Ibérico Magro is a special boneless rib cut combining texture with the rich remarkable flavour of Ibérico. It was done medium rare, allowing a total relish on the tenderness Ibérico at the outer layer. As the teeth further crunches to the center part, the juicy meat is tasted. Such a divine combination.

The slab of Ibérico Costilla (rib) is the signature and must try dish. Moreover, you can choose the preparation method. Go for the original way which Spaniard enjoy the most - salt & pepper, or go with either their secret homemade sauce or secret spicy homemade sauce (Malaysian style perhaps?).
Never once we encountered such a smooth knifing procedures with the ribs. The meat separates from the ribs easily, and it packs a bag of pleasant nutty flavour in the juicy meat.

Guinness Braised Short Ribs (RM 49) |
After such a hefty meal session involving Ibérico, we had a chance to sample a different variation of meat - Guinness Braised Short Ribs, and it was equally excellent! The ribs meat were soft, melting within a matter seconds in the oral environment. The braising with Guinness Stout were just nice, not too overwhelming to mask the natural taste of the ribs.
Nothing beats the Tapas combo platter (RM 68) if you have a long night and evening to spare at The BAR°N with a group of friends. It includes crispy pork belly, luncheon fries, chicken wings, pork satay, potato wedges and deep fried button mushrooms with 3 different condiments. Best eaten with a bottle of wine or beers.
On our personal preference, we enjoyed the crispy pork belly and satay. Imagine you could hear the crackling sound of the crispy pork belly skin when your friends beside you are having it!
The Affogato (RM 21) here remained one of our favorites. It has a balance of taste in terms of acidity from the Espresso and the sweet ending from the Haagen-Dazs vanilla ice cream, alongside with the nice scent from Sambuca.
Localization has been made into the dessert menu by having Deep Fried Banana with Gula Melaka (RM 19). Trust us, it is not another pisang goreng in the next door. The taste is awesome, pack with the aromatic banana in the crunchy dough batter.
